Sand eels^[1] are worm-like creatures that live in Tiger Widow Island.

While Cole, Nya, and Lloyd are building a raft to escape Tiger Widow Island, they are sabotaged by sand eels, who destroy the raft and cause Nya to learn Airjitzu on the spot.

Tommy Andreasen referred to "sand biters" in an interview with Brent Miller.^[2] Though the context was ambiguous, it's possible he was referring to these creatures, as a "sand biter" does not appear to be the name of any other well-known creature, real or fictional.
